Spiced Fajitas


It’s been a long time since I’ve done a recipe post, so here we are! Some of my favourite food ever is Mexican and Spanish they both have terrific flavours, my Mexican/Spanish inspired meal is FAJITAS… 2 tortilla wraps, trust me it’s filling!


Gluten, milk, may contain sesame


Chicken breast

1/4 green pepper

1/2 onion

1/4 tin sweetcorn

1/2 tinned tomatoes

2 tortilla wraps

1 tsp tomato puree

Sprinkle of cheese

Spices & Herbs – all 1tsp

Paprika, chilli powder, cayenne pepper, black pepper, basil, oregano.

For extra spice add in 1/2 a chilli and remember salad, I used lettuce, tomatoes, cucumber and spring onion!


1. Slice and fry the chicken until completely cooked.

2. Add in the pepper, onion cook until soft.

3. Add the sweetcorn and tinned tomatoes and tomato puree.

4. Add all the spices to the pan and reduce heat for a few last minutes.

5. Grate the cheese, your fajitas are ready to build!
