Chicken & Mushroom Risotto

Recipe description
This risotto dish is the ultimate one-pot wonder, a delicious, healthy & inexpensive meal to add to your 5 a day and get a full tummy… without having to do much washing up afterwards. Packed with flavour and quality nutrients and only taking 30-minutes maximum to make! And even you haven’t got time to spare, you can always throw it in a slow cooker.


Ingredients
1 Chicken breast
5 mushrooms
160g frozen peas
1 leek
6 baby corns
2 cups of risotto rice
2 garlic cloves
1 tbsp olive oil
Handful of Parsley
Parmesan cheese
Black pepper
½ stock cube
Method
1. Dice up the chicken into bitesize pieces and slice the veggies, mushroom, baby corn, leek & garlic
2. In a pan add the oil and rice followed by the boiled stock water (adding little by little allowing the rice to soak up)
3. Add the chicken and sliced vegetables peas and herbs/spices to the rice mixture and allow to cook through
4. Serve hot with a sprinkle of parmesan cheese & black pepper
