Baked halloumi, chicken & red pepper kebabs

Description
Many of us would rather have a takeaway on a Friday night, after a long hard week, I feel your pain! I’ve come up with a healthier… more delicious kebab without the grease, YAY. With chunky pieces of chicken and halloumi, along with the veg and salad, all wrapped up in a little pitta pocket. To adapt this recipe making it vegetarian friendly take out the chicken, also with the cherry tomatoes, they can either go in the baking tray with the kebab filling or as apart of the salad, the choice is yours. Spice wise, this dish would be amazing with a sprinkle of chilli powder, paprika, cayenne pepper, basil, or oregano.

Ingredients
To serve 4:
Wholemeal pitta bread x 8
Chicken breast x 4 fillets
Half a pack of halloumi cheese
1 medium red pepper
1 medium red onion
140g cherry tomatoes
Lettuce a few leaves each
Olive oil – Teaspoon
Method
Prep Time: 10 minutes
Cook time: 15 minutes
1. Preheat the oven to 200°C
2. Chop the pepper, onion, halloumi, and chicken, and place in a baking tray add the herbs/spices – (if required) and oil, mix and place in the oven for 15 minutes mix again half way through.
3. Prep the pittas and salad to serve as a kebab and plate up!
